It should take about 4 large eggs to get the 1/2 cup of whites.
Chopped fruit could be raisins, dates, apples, gladed cherries, etc.
If making Cookie Tart Shells, have several juice size glasses ready.
1. Preheat oven to slow (325 F). Coat cookie sheets with non-stick vegetable cooking spray.
2. Combine sugar, flour, baking powder and egg whites in large mixing bowl. Mix with electric mixer until well blended. Stir in fruit and nuts.
3. Drop batter by slightly rounded teaspoon onto prepared cookie sheets. Leave 4 inches between cookies.
4. Bake for 12 to 15 minutes or until lightly browned. Remove with spatula to wire racks to cool. - Or - Make tart shells by pressing cookie over bottom of juice size glass.
