Eggplant, peeled and cut crosswise into 1/2 inch slices

1/4 Tasse
Cooking Oil
1/2 Tasse
Grated Parmesan Cheese
2 Tasse
Homemade Tomato Sauce or 16 Oz.jar Italian tomato sauce
6 x ca. 30 g
Sliced Mozzarella Cheese
die Zubereitung:
Dip eggplant slices in beaten egg, then in flour. Brown eggplant in hot oil, about 3 minutes on each side. Drain well on paper toweling. Using half the eggplant, place in a singlelayer in baking dish. Sprinkle with half the parmesan cheese. Top with half of the tomato sauce and half of the mozzarella cheese. Repeat layers. Baked uncovered in a 400 degree oven for 15 minutes or until hot and bubbly.
