Cut vegetabes into small pieces. Take onion, green chillies, coriander, cumin seeds, turmeric powder, ginger, garlic and grind into a fine paste. Heat ghee and fry the paste till light brown. Add a pinch of sugar and required salt. Add vegetables fry and add well beaten curd and half a cup of water. Cook till tender and mix in garam masala. Garnish with chipped coriander leaves and serve hot.
